Hearty one-pot meals to warm up with

As the temperature drops, so does the motivation to make complicated, labour-intensive meals. Having a tasty meal on the table in less time, with less trouble and with fewer dishes is our recipe for a happy winter. Here are some hearty one-pot meals to warm up with.

BBQ Crock Pot Lentil Chili

This BBQ Crock Pot Lentil Chili is packed with plant-based power. It is loaded with protein and fiber and is also gluten free and flavourful. Pop all the ingredients into your slow-cooker crock pot for 3 to 4 hours on high, or about 5 hours on low. Serve topped with chopped cilantro, sliced avocado and sliced jalapeño for an extra kick. Yields 5 to 6 servings.

Cajun Sausage and Rice Skillet

You can think of this Cajun Sausage and Rice Skillet as a simplified, scaled-back version of jambalaya. The flavour profile is similar but it is easier to prepare and perfect for a weeknight warm-you-up meal. It only requires 15 minutes of prep work and 30 minutes of cooking. This recipe will make 4 servings of 1 ½ cup portions. This is a perfect meal for leftovers, so you may want to double everything up and add it to your meal prep for the week.

Chicken Stew

When the cold rolls in, regular, thin chicken soup may not cut it. Winter is stew season. This Chicken Stew is everything that a cold weather meal should be. It's warm, satisfying and easy to make.

Cheesy Frittata with Spring Greens and Shallots

Whether the chilly weather has you craving a hearty weekend breakfast or a great breakfast-for-dinner delight, this Cheesy Frittata with Spring Greens and Shallots is what you want on your plate. It is ready to eat in under an hour and serves 8 (or 4 hearty winter servings!).

One Pot Beef Stroganoff

This One Pot Beef Stroganoff could not be more comforting on a cold winter evening. It is loaded with ground beef, mushrooms, and a rich and creamy sauce that clings to the soft egg noodles. If you opt for something other than ground beef, be sure to use a tender cut, such as tenderloin or sirloin, and cut it into small pieces so it cooks more quickly. All you'll need is 15 minutes of prep time and 30 minutes of cook time until dinner is on the table. This is another great "leftover-maker" meal. Be sure to let it cool completely before freezing in a shallow container for up to three months (or half a Canadian winter)!

We hope that these wonderfully warm and comforting one pot recipes help you stay satisfied this season.
